Well, this is what I do when I'm not playing AA.
Those are some of my first dishes around a year ago.

Lookin sharp my friend =), those look like some pretty high-end meals haha

One thing I would suggest is to maybe keep some of the plates a bit tidier. In the 4th picture the sauce is just a little bit too "well-done". Easy to fix - just get a slightly damp cloth and wipe away the spots on the top and bottom of that plate. It'll help you keep that creative-artsy feel, but it keeps everything connected, clean, and help to keep the customers eye on the food rather then the sauce. (It also free's up a bit more of the "white-space" which is extremely attractive to the eye, as you can see in picture 2).

One more tip (it may be over-ridden if your job requires you to do it, or you are being told to do it haha) but be very cautious on how much you decorate the "lip" or perimeter of your plates (pic #5). 2 reasons for this are -
1.) When you or a server is transporting the dish, it is extremely difficult to handle the plate/bowl without accidentally smudging the garnish - which, if happens, means that you have to remake that dish...which is a pain and keeps the customer waiting longer then needed for their food.
2.) A customer will sometimes want to turn a bowl/plate to eat whatever they desire first. If the only way that they can spin it is by touching their food...well let's just say that you may lose some repeat business, cause nobody likes to get their hands messy if they don't have to.

You did a good job with what you had...but what the fuck is that doing on the menu? It looks decent until you throw on all that stuff on top (is that cauliflower?) if that is how you are being taught to make it...I would suggest you try a few different other idea's on how to assemble or arrange how that looks on a plate lol.

All in all though you got some pretty sweet shit going on man those dishes look tighttttt. If you ever come to Canada, or when I visit Europe in a few months, we gotta do some cooking together <3

**(is that cauliflower?) > I don't know... In dutch it's Rucola or Roquette sla...
My favorite one was #2, caviar, ground steak of tonijn (it's a fish idk how to say.. thon?) , sauce of wasabi and wakame.
LoL, On #4 You can see I was a bit bad mooded... My servers can fuck me up so easy... (they're retarded... really)
Anyways, when I look at it now, it isn't bad but the sauce is overwhelming the plate...
Oh and I really would like to come to Canada! Smile to eat Canadian Lobster.. Ppl here tell me it's good over there.. (Big lobsters! Smile)
And I'm looking for an location in Belgium to start my own restaurant soon.
I hope one day I can invite you there! Smile So we can cook our own menu! Haha..
Ohh and Plz!!! visit Belgium on your journey to Europe! I hope we can meet somewhere there... Smile
